Roast Squash Salad
Butternut squash is a truly versatile vegetable. It tastes equally wonderful in tarts,soups, pasta or curries, and even baked into muffins - perfect for a healthy morning tea break from your busy home working schedule!
For this recipe however, we're roasting the squash and creating a dish that could be used as either a delicious light lunch, or a scrummy starter at dinner time - just make sure you get out of your home office at some point to try it, as it's too good to miss out on!
We didn't want to restrict your imagination with an image of roasted butternut, which - let's face it - could look pretty downright ... ORANGE.

Cooking time: 30 minutes
Serves: 4
Ingredients
1 butternut squash
The Groovy Food Company Omega High Five Oil
Salt and pepper
1 small dried red chilli
1 tspn fennel seeds
20 slices of Parma ham
4 medium-size handfuls of fresh watercress
6 tbsps of The Groovy Food Company Omega Cool Oil
4 tbsps of cider vinegar
A small block of Parmesan cheese
Method
Firstly, warm up your oven to 190c.
Remove the seeds from the squash and then divide into quarters.
Rub The Groovy Food Company Omega High Five Oil all over the squash pieces, then lightly coat them in the chilli, salt, pepper and fennel seeds. Pop them onto a baking tray, and then put them in the oven.
Check them after 30 minutes. They should be soft, and smelling great! Take them out the over and keep them warm.
Take the cider vinegar, and mix it with The Groovy Food Company Omega Cool Oil .
Put a piece of the squash on each plate, then place a few Parma ham slices on top of each.
Drizzle with your vinegar and Cool Oil dressing, and then shave Parmesan over that. Lastly, season with some black pepper.
